Heaven in a cup ..

cake!

Girlfriends and the odd man out there who is reading this blog(if at all!!!) you have got to try this out!

Yesterday, actually no, day before, I baked this yummalicious, absolutely finger licking, downright drool worthy mango cupcake, recipe from Vaishali’s blog(link to her’s obtained from Madhuram’s blog).  The cakes turned out awesome and the icing on it was to die for! This is one cake I am definitely baking often 🙂 Rad totally loved it 🙂

The only thing that I would do differently, is probably lessen the quantity of cardamom.  Oh! I also went light on the sugar. The original recipe calls for 2/3 cups sugar. I reduced that to 1/3 as per Madhuram’s suggestion and I  reduced the sugar in the icing to 1 cup.

Now for the pictures!

I love this cupcake stand! Hence had to display it here. I got the cupcake mould, a lid for the mould and this stand all for 6$!!! Thank you Walmart 🙂

Tata!

OMG! I’m only inspired by all the drool worthy blogs out there:) and amazed that people can bake so beautifully! Madhuram is an absolute inspiration with her eggless cooking blog.

The number 1 reason why this caught my attention was also just that! it had mango in it 🙂 You should give it a shot, usually I am very unhappy with the mango pulp that we get here, but in this cake it is just perfect!
